Yesterday I stopped by Louie’s 10th St. Lounge & Laundromat and finally had my first bierock — and now I understand why it’s such a Kansas staple. A bierock is a soft homemade bread pocket filled with seasoned meat, cabbage, and spices, and this one was absolutely delicious. The bread was incredibly soft, and dipping it in the spicy mustard, they can sell out, so definitely get there early if you want to experience one.
